Sesame Fruit-and-Nut Bars

When you're traveling out of your time zone, stash several of these addictive bars in your bag; they're made with sesame seeds, dried cherries, and walnuts. The last two ingredients are a natural source of melatonin, which can help fight jet lag, and they're high in antioxidants to combat stale, dirty air.

Servings: Makes 16 2-inch squares

Ingredients:

2 cups raw walnut pieces
1 cup raw white sesame seeds
1 cup dried tart cherries
1/2 tsp. coarse sea salt , such as Maldon or Celtic
4 Tbsp. raw coconut butter
3 Tbsp. agave nectar or dark honey

Directions:

Active time: 35 minutes
Total time: 1 hour, 35 minutes

Note: For long-term storage, these bars should be kept refrigerated. That said, a few will keep perfectly well at room temperature during a day on the go.

Preheat oven to 325°. Line an 8" square baking pan with parchment paper.

Spread walnut pieces on a rimmed baking sheet and toast in oven, shaking pan frequently, until walnuts just start to turn golden brown and smell slightly fragrant, about 15 minutes. Remove from oven, set aside in a bowl, and let stand until cool to the touch.

Repeat process with sesame seeds, toasting about 10 minutes and watching carefully so seeds do not burn. Remove from oven and let stand until cool to the touch. Transfer to a medium bowl.

Place walnuts and cherries in a food processor or blender. Process until nuts and fruit come together, coarsely chopped, to form a sticky ball.

Add nut and fruit mixture to sesame seeds. Add salt, coconut butter, and agave nectar or honey and mix, using hands, until well combined. The mixture should easily stay together when squeezed.

Press into prepared baking pan, forming a layer approximately 1/2 inch thick. Refrigerate until completely cool, about 1 hour. Cut into squares and serve.

Watermelon Agua Fresca Smoothie



Traditionally, authentic agua frescas are made without blenders by simply mashing fruit with a fork or masher before adding water. We've taken the liberty of using a blender for an ultra-light, refreshing rendition of this traditional Mexican drink. In the spring and summer, we use fresh strawberries and a few ice cubes in lieu of the frozen ones for ultimate freshness.

Servings: Serves 2 (makes about 2 1/2 cups)

Ingredients:

3 cups diced seeded watermelon , chilled
1 cup frozen strawberries
1 Tbsp. fresh lemon juice
Pinch of sea salt
Agave nectar (optional)

Directions:

Combine the watermelon, strawberries, lemon juice, and salt in a blender. Blend until smooth. Sweeten with agave nectar, if you like.

Morning Glory Smoothie

Serves 3

What You Need

A
2 carrots, peeled & sliced
200ml NESTLÉ® Low Fat UHT Milk
2 oranges, peeled & cut into segments
1 green apple, peeled & cored, cut into chunks
1 mango, peeled & seed removed

B
150ml NESTLÉ® Natural Yogurt
ice cubes

Make It

1.In a blender, add ingredients A and blend until smooth.
2.Then pour in NESTLÉ® Natural Yogurt and top with ice cubes.
3.Blend until mixture is thick and creamy.

Hot Dog & Tomato Scramble

Preparation: 30 mins

Serves: 4 serving

Suitable for: children aged 1 year and above

Ingredients

A
2 hot dogs, cubed
1 tomato, removed seed & cubed
2 tbsp Water
1 tbsp Milk that is suitable for your child
(recipe uses NESLAC EXCELLA GOLD)
2 eggs
a little butter
2 slices bread, toasted

Cooking Method

1. In a bowl, mix well ingredients A.
2. Heat a small knob of butter. Add ingredient A mixture.
3. Stirring all the time until cooked. Cool slightly
4. Arrange toasted bread on plate. Spoon scramble and serve.

Rolled Bread Toast


Preparation: 20 mins

Cooking: 20 mins

Makes: 2 pieces

Suitable for: children aged 1 year and above

Ingredients

A
2 slices white/whole meal bread
½ tsp strawberry jam
1 egg, lightly beaten
30 gm milk that is suitable for your child
1 tsp cooking oil

Cooking Method

1.Remove crust from bread; spread strawberry jam on bread.
2.Roll tightly bread and chill for 10 minutes.
3.Then dip rolled bread, one at the time in beaten egg mixture.
4.Cook in lightly grease pan until browned all sides and serve

Fruity Toast

Preparation: 15 mins

Cooking: 20 mins

Makes: 8 servings

Suitable for: children aged 1 year and above

Ingredients

A
1/3 cup Milk suitable for your child’s age
2 Eggs, lightly beaten
½ tsp Vanilla essence
1 tbsp Chopped red cherries
1 tbsp Chopped green cherries
1 tbsp Blackcurrants
6-8 slices Bread, with trimmed edges and cut into desired shape
½ cup Infant cereal
Oil for frying

Cooking Method

1.In a bowl, mix ingredients A well.
2.Dip bread pieces in mixture A and coat with infant cereal.
3.Shallow fry the coated bread until golden brown. Serve while still warm.

Fruity Pancakes

Preparation: 10 mins

Cooking: 30 mins

Serves: 8 pieces

Suitable for: children aged 1 year and above

Ingredients

A
50g plain flour
30g Milk that is suitable for your child
(recipe uses NESPRAY® Milk)
1 egg
2 tsp water
400ml water
2 tbsp cooking oil
1 banana, cubed
1 medium size mango, cubed
maple syrup or honey, optional

Cooking Method

1.In a blender, add ingredients A and blend until well mix.
2.Heat frying pan, add 2 tablespoons of batter. Tilt the pan to evenly coat and cook until pancake is set and underside is golden.
3.Loosen the edges and brown the other side. Then slide out on the plate.
4.Spoon fruits into each pancake, fold and arrange on serving plates. Top with the remaining fruit and pour over a little maple syrup
5.Serve at once.

Fried Koay Teow


Preparation & cooking time : 45 minutes
Serves: 4

3 tablespoons oil
4 cloves garlic, minced
1 sachet MAGGI Sambal Goreng Paste
100 gm diced chicken
100 gm shelled prawns
50 gm fishballs
1 tablespoon MAGGI Dark Soya Sauce
1 tablespoon MAGGI Oyster Sauce
300 gm sliced koay teow
10 stalks chives, cut into 4 cm sections
1 cup beansprouts
1 red & green chilli fried shallots


1 Heat oil, stir fry garlic and MAGGI Paste until aromatic

2 Add A and fry 2 minutes.

3 Stir in MAGGI Sauces, “koay teow? chives and beansprouts. Fry until done.

4 Garnish with sliced red & green chilli and fried shallots.

Oriental Spaghetti Pancake

Preparation & cooking time : 30 minutes
Serves: 4


200 gm BUITONI Spaghetti
3 eggs, beat slightly
3 tablespoons oil
1 teaspoon MAGGI Chicken Stock Granules
3 tablespoons oil
4 cloves garlic, minced
4 cm ginger, minced
300 gm fillet steak, thinly sliced

A
¾ cup water
3 tablespoons MAGGI Oyster Sauce
2 teaspoons black peppercorn, crushed
1½ teaspoons MAGGI Chicken Stock Granules
1 teaspoon cornflour
½ teaspoon sugar
1 small green capsicum, thinly sliced
1 small red capsicum, thinly sliced
1 small yellow capsicum, thinly sliced


1 Cook Spaghetti according to the instructions on packet; drained. Mix cooked Spaghetti with beaten eggs, oil and MAGGI Stock.

2 Place Spaghetti mixture in 20 cm pie pan; flatten slightly with spatula. Bake in preheated 180°C for 10 -15 minutes.

3 Meanwhile, heat oil, lightly brown garlic and ginger. Add beef and fry for 2 minutes. Stir in A ingredients and cook for 2 minutes

4 Add capsicum and fry for 1 minutes; remove from heat.

5 When serving, place Spaghetti pancake on a serving plate and top with beef mixture. Serve immediately.

Maggi Chicken Floss Dumpling


Preparation & cooking time : 1-2 hours
Serves: 20

40 pcs (130g) Dried bamboo leaves, soak overnight, drain.
40g Hemps, soak overnight, drain.
500g Glutinous rice, soak 4 hours, drain.

A.
2½ Tablespooons MAGGI Concentrated Chicken Stock.
3 Tablespoons Oil.

B.
1 sachet MAGGI Sambal Goreng Paste.
300g Cooked Chicken Breast, shredded.
2 Teaspoons MAGGI Concentrated Chicken Stock.
2 Teaspoons MAGGI Dark Soya Sauce.
½ cup Water.

1 Bring ingredients B to boil and simmer till dry. Divide into 20 portions.

2 Steam rice for 20 minutes, add ingredients A and divide into 20 portions.

3 Place 2 pieces of soaked bamboo leaves back to back and cut off the ends.

4 Lay leaves on a chopping board, spoon 1 portion of steamed rice on the leaves.

5 Flatten slightly, top with 1 portion of filling, roll up like the shape of

6 Tie the 2 ends with prepared hemps neatly, like a parcel. Steam for 30 minutes over high heat

Baked Sweet Potato Fries with Cinnamon and Paprika


Serve with hamburgers, hot dogs or patty melts.

1 sweet potato per person, peeled and sliced into 1/2" strips
olive oil
salt
paprika
cinnamon

Preheat the oven to 425 F.

Peel and slice the sweet potatoes into strips. The easiest way to slice them after they're peeled is to put the potato length-wise in front of you and slice off a 1/2" strip. Set it aside, then slice the rest of the potato into 1/2" slices. Remove the last one, which will be much smaller than the rest, and stack up all the others, then slice again to create to 1/2" strips. Slice the end pieces separately.

NOTE: If you buy the sweet potatoes already sliced like I've seen at Costco and I'm sure are available elsewhere, I think this flavoring would work great, but really slicing your own is much cheaper!

Put the sweet potato strips into a bowl and pour enough olive oil in and toss to coat each piece. You don't want too much or they get mushy, trust me. Sprinkle with salt, paprika and cinnamon and toss periodically while you're sprinkling so everything is fairly evenly coated.

Turn onto a jelly roll pan, a pan with just a small lip. Bake for 30-40 minutes, turning once or twice.

Egg Foo Yung Recipe


There is no standard meat used to cook Egg Foo Yong, you can use ham, chicken meat, beef, prawn, squid, sausages, any meats as you like. Some people love to use the left over meat to cook this dish.

Ingredients Needed:

5 eggs, beaten
5 prawn (M), clean, peeled and chopped into small pieces
1/2 Chinese sausage (lap Chiong), chopped into small pieces
1 onion, chopped into small pieces
3 chillies, chopped into small pieces
1 spring onion, chopped into small pieces
2 tbsp water
1 tbsp soy sauce
1/2 tsp salt
2 tbsp cooking oil

Cooking Steps:

1) In a big bowl, add in eggs, spring onion, soy sauce, salt and water. Beat until the egg mixture become smooth and the salt disappear.

2) Heat up a fry pan or wok, add in cooking oil. When the oil is hot, add in onion, prawn, Chinese sausage, chillies, and stir fry for around 1 minute.

3) Pour in the egg mixture, make sure the fried ingredients are fully covered by egg mixture. Turn to medium heat.

4) After around 2 minutes, turn the egg and fried the other side till golden. Served hot with steamed rice.

Hamburgers and Meatballs






Burgers – or try baking the mixture as a meatloaf, or even frying the minced meat to use as a topping for pasta.





Meatballs Ingredients

500g meat (250g beef and 250g pork. Pork may be replaced with chicken)
2 eggs
2 large potatoes or 3 small potatoes
1 large onion or 2 small onions
2 slices of bread, or 1 cup of breadcrumbs
Optional: ½ tbsp Worcestershire sauce
Optional: ½ tbsp ketchup
1/4 cup milk
Herbs to taste such as basil, rosemary, oregano, or thyme
Salt and pepper, to taste (1 tsp salt, minimum)
Oil for frying

To prepare the meat :

Step 1: Defrost the meat for several hours beforehand.

Step 2 : Breadcrumbs: Toast 2 slices of bread and blend them or just use store bought breadcrumbs.

Step 3 : Peel the potatoes, wash them thoroughly, and cut into quarters. If you are not peeling the potatoes, be sure to cut out all the eyes, mold, or fungus growing on the potato skin. Remove any parts of the potato that are green as the green parts are toxic! Place the potatoes in a microwaveable bowl, and pour in enough water to just cover them. Cover the bowl and microwave for four minutes. Pour the water into a pot to reserve it to make gravy. Microwave the potatoes for another minute, covered.

Step 5: Peel, cut, and blend onions. Reserve a teaspoon for gravy if you are making meatballs.

Tip : Mini cleavers are the best knives for kids to use. They are just like the big ones. However, they have a much smaller and safer blade, and a longer handle – perfect for the little ones!

Caution : This recipe involves working with raw meat, knives, microwave oven and stovetop. Adult supervision is recommended. Children must be extra careful not to hurt themselves. Be aware that cleanliness is of high priority when working with raw meat. Wash your hands thoroughly with plenty of soap before and after handling raw meat.

Method :

Step 1 : Using your hands, combine the meat in a large mixing bowl.

Step 2 : Add the eggs, potatoes, onions, breadcrumbs, Worcestershire sauce and ketchup and combine by hand. Note: It helps to have one person combining the ingredients while the other adds them into the bowl.

Step 3 : Pour in the milk gradually until the mixture is just moist but not too wet.

Note: you may not need all of the milk, or you may need more of it; use your judgment here.

Step 4 : Season the meat with the herbs, salt, and pepper, to taste.

Step 5 : Make a small test patty and fry it. This will allow you to taste the cooked meat to make sure it is properly seasoned.

Step 6: Add more seasoning if necessary, and test again.

Step 7 : Shape the rest of the meat into patties or meatballs.

Step 8 : Coat each patty or meatball in a little flour and lay them on a plate lined with paper towels.

Step 9: Spread a layer of oil in a nonstick pan and fry the meat until browned, at 160 F. Meat must be well done.

Onion Quiche

Crust
1 cup flour
1/4 tsp salt
1/4 pound of butter
1 egg yolk
3 tablespoons ice water

Filling
2 onions, sliced thinly and sauteed in a bit of butter until soft
leftover egg white from crust plus 3 more whole eggs
2 cups milk or cream
pinch of cayenne pepper
pinch of nutmeg
2 cups shredded cheese (Swiss or Cheddar or a combination)

Use a mixer or food process to mix the flour and salt, then add the butter and mix until crumbly. Add the egg yolk and water and mix until it forms a ball. You don't need to roll it out. Just break off pieces and press it into your pie pan or quiche dish. Prick with a fork a few times and bake at 450 for 5 minutes to partially bake it. (If you want to roll it out, refrigerate it for 20 minutes or so to chill the dough first.)

While the crust is baking, slice the onions and saute them in a bit of butter until soft. You could also use cooked bacon, ham, or other leftover veggies instead of the onions.

Mix together the leftover egg white and additional eggs, milk, nutmeg and cayenne pepper.

Put the onions in the partially baked pie shell, sprinkled the cheese over it, and carefully pour the custard mix in.

Baked at 450 for 15 minutes, then at 350 for 30 more minutes.

Beef/Chicken and Parsley Omelet

5 eggs
1/2 a chopped up onion
4 slices of beef/chicken
handful of chopped parsley leaves
2 table spoons of plain yogurt
salt and pepper

Method

Cook the bacon pieces until they were dark brown, flipping them over every couple minutes. Drain on paper towels when done.

While they’re cooking, crack open all the eggs into a medium sized bowl and mix them together. Set aside.

Chop the onion into about 1/4 inch pieces, put in a bowl, and set aside.

Leave a spoonful or two of bacon grease in the pan and add the chopped onion. Saute until limp then put them back in the bowl and dump out any leftover grease.

Pour the eggs into the greased up pan, let it start to set and try to lift up the edges a bit and let the runny eggs run under, then leave it alone until it’s a little soft and wet on the top, but not liquidy.

Take the beef out and chop or tear it into small, half inch pieces.

On half of your eggs, sprinkle on the beef, then the parsley leaves, then the onions and the yogurt. Then, fold the empty half of the eggs on top of the other half.

Omelets with Cheese, Sour Cream and Tomatillo Salsa


Ingredients:-
4 eggs
salt and pepper to taste
1 Tbs butter
1/4 cup or so shredded cheese
1/4 cup or so sour cream
a few large dollops of tomatillo salsa

Method

Whisk the eggs together in a medium bowl and add salt and pepper to taste. Grate the cheese. I just had some of the Mexican blend around otherwise I would have just used Jack or Cheddar.
Heat the butter in a 10 inch skillet over medium heat. When it has melted, tilt the pan so the butter has coated the bottom well. Then pour in the eggs.

Cook slowly until the bottom has begun to set. Tilt the pan and lift the set eggs to let the runny ones run under the set part. Continue until the eggs are still wet on the top, but not too runny. Add the cheese, salsa, and sour cream to half the eggs, then fold the other half over onto the top. Cook another minute or two until firmly set.

Cut the omelet in half and serve with some toast. French bread is fantastic but any buttered toast will do.

Open-Faced Tomato Sandwiches with Basil Mayonnaise and Bacon

This mouthwatering, overloaded bacon and tomato sandwich is built on a slice of sourdough bread spread with basil-and-lemon mayonnaise.

Servings: Serves 4

Ingredients:

• 1/3 cup mayonnaise
• 1/2 cup basil leaves
• Sea salt and freshly ground pepper , to taste
• 1/2 teaspoon fresh lemon juice
• 4 slices bacon
• 4 slices (1-inch-thick) sourdough bread
• 4 slices (3/4-inch-thick) beefsteak tomato

Directions:

In the bowl of a food processor with knife blade attached, combine mayonnaise, basil leaves, 1/4 tsp. salt, and lemon juice. Puree until smooth. Transfer to a bowl and refrigerate until ready to use.

In a large skillet over medium-low heat, cook bacon until very crispy. Transfer to a paper-towel-lined surface; when cool, break into 1/4-inch chunks.

Toast bread. Spread each slice with about 1 Tbsp. basil mayonnaise. Sprinkle with bacon, dividing it evenly among the 4 sandwiches. Top each with a tomato slice and season with sea salt and pepper before serving.

Irish Oatmeal with Apple and Cinnamon (Breakfast)

The flavors of apple and cinnamon enhance the already delicious steel cut oats.

Servings: Serves 4

Ingredients:

1 cup raw steel cut oats (regular or quick)
2 apples , cored and shredded
1 tsp. ground cinnamon
1 tsp. maple syrup
1/8 tsp. salt
4 Tbsp. toasted chopped almonds
2 tsp. Smart Balance Buttery Spread
Directions:

Bring 3 cups of water to boil in a medium pot. Add salt and stir in oats, apple, cinnamon and maple syrup.

Cook oatmeal according to the package directions.

Divide into serving bowls and top with spread and almonds.

Chocolate, Banana and Peanut Butter Smoothie (Breakfast)

Love chocolate? Start your day off with a small amount of the indulgent treat in this healthy and filling smoothie.

Servings: Serves 1

Ingredients:

1 large banana (Option: Use a frozen banana. To freeze, peel the banana, chop in quarters, wrap in plastic wrap or plastic bag and freeze.)
1 cup vanilla soy milk , such as Silk Vanilla Plus Fiber
3 Tbsp. pasteurized liquid egg whites , such as AllWhites
1 1/2 Tbsp. chunky peanut butter , such as Smart Balance
1 Tbsp. plus 1 tsp. cocoa powder , such as Hershey's Natural Cocoa
Directions:

Combine all the ingredients in a blender and blend until smooth, about 2 minutes.
