Apple Pie


Prep 20 mins
Bake 25 mins
Serves 4-5

* 250g plain flour
* 120g chilled butter cubes
* 1 egg yolk (retain egg white)
* 30ml ice water
* 3 red apples, skinned and cutinto thin slices
* 1 egg white to glaze
* ice-cream to serve (optional)Filling
* 1 egg
* 120g double cream (availableat supermarkets)
* 100g brown sugar
* 1 tsp cinnamon powder

  • Sieve flour into a bowl. Add butter and knead into a dough.

  • Combine egg yolk with ice water.Work mixture into the dough.Cling-wrap dough and refrigerate for 1 hour.

  • Preheat oven at 180°C. To make pastry, flatten dough to 0.5 mm thick using a rolling pin. Place over a pie tray; snipoff excess. Place apple over and set aside.

  • To prepare filling, whisk egg and cream into a thick consistency then add sugar and cinnamon powder.

  • Pour into prepared pie dish. Bake onlow rack for 10 mins. Remove, glaze with egg white and continue to bakeat 170°C for 15 mins. Serve hot with ice-cream, if using.
