We don't eat pork so for those ingredients which included pork, has been substituted it with beef or chicken.

Baked Mashed Sweet Potato with Orange and Pecan

Servings: Serves 4

Ingredients:

2 large sweet potatoes
2 oranges , peeled, sectioned and roughly chopped
1/2 tsp. rosemary , finely chopped
1/8 tsp. salt
1/2 cup pecans , roughly chopped
Directions:

Heat oven to 400°.

Place sweet potatoes on a sheet tray and bake until tender, about 30 minutes (exact time varies depending on size).

Remove potato skins and mash with orange, rosemary, salt and pepper to taste.

Put mashed sweet potatoes in 1 large pan (or 4 individual ramekins) and sprinkle with pecans.

Bake until pecans are toasted, about 5 minutes.

Note: Round this out with 3 ounces of cooked fish, skinless poultry or lean meat and 1 cup of steamed vegetables with a spritz of lemon juice or balsamic vinegar.
